Obama's Red, White and Blue Carrot Benefits and Health Cake

By Carol Giambri

What do President Obama's red, white and blue have in common with healthy carrots? The American flag comes in these colors, but are you seeing carrots this way?

Carrots, Corn and Beans

What do President Obama's red, white and blue have in common with healthy carrots? The American flag comes in these colors, but are you seeing carrots this way?

When we talk politics or religion some say both don't match.  Here we will talk about the world of carrots.

The Chef is Ready

I bet you heard that carrots are good for your eyes.  Eating orange only or reddish orange?

Growing your own is fun.  Call in your kid helpers if you have any or round up neighbor kids to help.  Carrots come in different sizes, varieties and shapes.  All are delicious.  Different colors are pretty on your plate.

Color me red or orange….

  • Danvers
  • Red Core Chantenay
  • Scarlet Nantes

Carrots in package or loose

Color me white…

  • Creme De Lite
  • White Satin
  • Snow White

Color me blue or give me a drink…

I am waiting to find the first blue carrot or seeds to grow my own but not yet. However, I surprised myself and hope you too that there is a Tequila Surprise Carrot.  Imagine that.  What a name too.  Surely for marketing has to get a lot of buyers thinking you will be drinking your carrots and feel like it's a "sunrise" that just hit your head and your heart.

Health benefits….

Red: reduces degenerative disease, prevents cardiovascular problems, helps prevent the risks of cancers such as prostrate.

White: lots of fiber helps fight against the colon cancer battle

Check with your medical provider on your particular situation.

I bet you have your favorite Carrot Cake recipe. Try red or white carrots, add a nice icing and yum it will be.

Your Red, White and Blue Cake or Pie…

No recipe, friend unknown but thanks to that person. Create your beauty using carrots of many colors.  Get creative.

Organic Salad

Cake, Ice Cream, Slaw, Salad…

Slaw it is….

————————————————————————————————————————–

Carrot Slaw – Carol Giambri

  • Finely grate 3 large carrots (to start)–organic if possible
  • Squeeze fresh lemon juice on top–less is best to start
  • Pinch of salt
  • Little cold pressed olive oil
  • optional: Handful of organic raisins (soaked if possible to soften)

Mix together

Eat in salad or serve separately as a Carrot Slaw

Enjoy!

Remember your dog loves raw carrots.  Whole is best for chewing or grated.

Reflecting and Acting…

More fresh organic carrots please? They are delicious cooked but fresh is always better if you can digest it.  Next time you are planting seeds or buying carrots see if they come in different colors.  You may be surprised with this teaser.  Bring the kids into the garden to help or borrow some kids who may love gardening and being your helper. Start digging (loving and harvesting) the carrots together!!

I've never grown carrots and was not aware there are so many variations! I'll have to keep my eyes open the next time I'm perusing the produce section.

Kim,
The gorgeous colors of carrots is amazing. I'm waiting for a green one to show up one day.  What about a HOT pink one?  Amazing.  All have the different flavors and gorgeous to grate in your salads–fresh is best. Enjoy!

Great post Carol!  I'm with Kim…I no idea that carrots came in other colors besides orange!  Another thing learned from the great Carol!  Thanks for sharing!

Jen, I suppose we don’t know what we don’t know and I there in different areas myself. Now when you shop how about looking for carrots besides the orange. Maybe add some into your fresh salads–adding more color and flavor enhancement. Waiting for HOT pink hair lady color carrot.

Thanks Carol, I love growing my own carrots.  They are so easy to grow and they come in not only cool colors but also very creative shapes!  My kids love to pick them ~ I hardly get them washed off before they're chopping on them.  I was cleaning out my garden just a couple of weeks ago and discovered a hidden unpicked carrot.  Amazing that it was still good in January!

How interesting, Carol. I didn't know all that about carrot! Thanks for the humor!
