I bet you heard that carrots are good for your eyes. Eating orange only or reddish orange?
Growing your own is fun. Call in your kid helpers if you have any or round up neighbor kids to help. Carrots come in different sizes, varieties and shapes. All are delicious. Different colors are pretty on your plate.

I am waiting to find the first blue carrot or seeds to grow my own but not yet. However, I surprised myself and hope you too that there is a Tequila Surprise Carrot. Imagine that. What a name too. Surely for marketing has to get a lot of buyers thinking you will be drinking your carrots and feel like it's a "sunrise" that just hit your head and your heart.

Red: reduces degenerative disease, prevents cardiovascular problems, helps prevent the risks of cancers such as prostrate.
White: lots of fiber helps fight against the colon cancer battle

I bet you have your favorite Carrot Cake recipe. Try red or white carrots, add a nice icing and yum it will be.

Carrot Slaw – Carol Giambri
- Finely grate 3 large carrots (to start)–organic if possible
- Squeeze fresh lemon juice on top–less is best to start
- Pinch of salt
- Little cold pressed olive oil
- optional: Handful of organic raisins (soaked if possible to soften)
Mix together
Eat in salad or serve separately as a Carrot Slaw
Enjoy!

More fresh organic carrots please? They are delicious cooked but fresh is always better if you can digest it. Next time you are planting seeds or buying carrots see if they come in different colors. You may be surprised with this teaser. Bring the kids into the garden to help or borrow some kids who may love gardening and being your helper. Start digging (loving and harvesting) the carrots together!!

Jen, I suppose we don’t know what we don’t know and I there in different areas myself. Now when you shop how about looking for carrots besides the orange. Maybe add some into your fresh salads–adding more color and flavor enhancement. Waiting for HOT pink hair lady color carrot.
Thanks Carol, I love growing my own carrots. They are so easy to grow and they come in not only cool colors but also very creative shapes! My kids love to pick them ~ I hardly get them washed off before they're chopping on them. I was cleaning out my garden just a couple of weeks ago and discovered a hidden unpicked carrot. Amazing that it was still good in January!
